Though I’m not a pro, I’m a self-taught cook with a real love and passion for healthy whole foods and a daily student of the research, science and studies supporting the endless benefits of plant-based nutrition.
I grew up in a traditional family, complete with family dinners served at 6:00pm, lovingly prepared by my mother, which included the four food groups of the 1950’s: meat, fruits & vegetables, grains & potatoes and we washed all that down with a big glass of milk.
After a lifetime of over and emotional eating and diet overload, I made a radical switch in 2007 giving up meat and eggs, then over time cutting out dairy and seafood, then oils in 2012, ending my "diet" days for good.
Today my meals looks invariably different from the garden salad and French fries of my early transition to eating plant-based. I have learned so much since then! I'm no longer feeling limited... but limit-LESS in creating delicious food combinations using everyday ingredients and implementing strategies and practical solutions for keeping the plant-based diet doable for me. I have even learned to like foods I never had before (mushrooms!) and have maintained a 23 lb. weight loss for the past 2 years. You can read my story here.
I may have, at one time or another, been just about every version of vegan there is out there from junk food vegan to raw foodist to whole food plant-based. The truth is, wherever you may be in your plant-based journey, I’ve probably been there, too.
I live in a “mixed diet” household...the lone vegan wolf in a pack of carnivores. (I'm badass like that.) What I’ve learned about myself over the past 10 years is I don’t really want to spend that much time in the kitchen. I want simple, delicious, satiating, nutritious meals to fuel my body so I can spend my time doing the things I love doing such as hiking or biking the trails with my husband, visiting with my family or my girlfriends, watching a movie snuggled with my girls (I don't even care what it is), reading an insightful or compelling book and spending time deep in the woods.
We eat because we need to in order to live...not the other way around. And if I can make this turn-around, I promise, anyone can.
